Steps to upgrade my wife’s new iPhone: 1) unpair Apple Watch 2) connect new iPhone to iTunes and perform encrypted backup 3) power on new iPhone and set up as new device 4) update iOS to match latest version of old iPhone 5) restore new iPhone from encrypted iTunes backup 6) re-pair Apple Watch.
